Today, Mizunara casks account for just 10% of the whiskies aged in Japan. Its intrinsic qualities and the aromas it transmits are recognised by Japanese whisky lovers for its unique character. The Matsui Mizunara Cask is a single malt distilled by the Kurayoshi distillery in Tottori prefecture. This whisky is aged in Mizunara oak casks. Mizunara oak is as famous for its rarity as for its complexity. Mizunara oak takes 200 to 300 years to mature, giving it exceptional aromatic qualities. This variety of oak is found only in the forests of Hokkaido and the Tohoku region, north of Honshū. Mizunara brings a honeyed woodiness that coats the whisky and adds an elegant length specific to this ageing process. This whisky is reduced with fresh water from snowfalls in the Daisen mountains. Ageing takes place in Tottori prefecture, where nature is dominant and temperatures vary greatly with the seasons (the angels' share corresponds to 3% evaporation from the barrel).
